Grey cotton gilet in a stretch cotton at 300 grams to the metre, a heavy cotton with the body to hang straight. Grey over a white shirt is the simplest thing a gilet can do, and it does it without a jacket's sleeves getting in the way.
No chest canvas and an unpadded natural shoulder, so it sits close to the body. The elastane in the cloth means it recovers after a day's wear. Cut to your measurements.

Steam rather than wash, and press under a cloth. Rest it a day between wears on a shaped hanger. Dry-clean sparingly; once or twice a season is plenty.
